You'll Need

  • 2 pounds apples
  • preferably Granny Smith
  • peeled and coarsely chopped
  • 3/4 cup coarsely chopped nuts
  • such as almonds or walnuts
  • 1/4 teaspoon ground cinnamon
  • 1-1/2 tablespoons honey or superfine sugar
  • 3 tablespoons grape juice

This simple Passover dish of chopped apples and nuts held together by honey symbolizes the mortar used by the Israelites to lay bricks in Egypt. This is an easy and tasty dish to eat as a sidedish or as an afternoon snack.

1. Using a food processor (or first by hand, then in a blender), finely chop the apples and nuts.

2. Add the remaining ingredients into the food processor or blender and process until the mixture reaches a desired consistency, either finely chopped or ground to a paste. (If necessary, add another tablespoon grape juice, to reach a smoother consistency.)

3. Serve at room temperature on top of matzah or stirred with plain yogurt.

The Charoset can be kept covered, in the refrigerator for up to three days.
